Cameo Apple Sauce

Prep Time: 5 minutes

Chill Time: 1/2 hour

Quantity: 4 cups

2 cups Cameo apples, diced

1/2 cup red onion, diced

1/2 cup (1 large) Anaheim pepper, finely chopped

1 jalapeño, finely chopped (optional)

1/4 cup lime juice

1 tbsp. chopped fresh cilantro

1/4 tsp. salt

1/2 tsp. freshly ground black pepper

Combine all ingredients in a large bowl and mix well. Cover with cling film and refrigerate for 30 minutes or until ready to serve.

Tip: For a snack, serve with tortilla chips or use as a garnish to complement a meal of grilled chicken, fish or pork.
